To the East, Vietnamese cuisine with its fish sauce and zesty herbs; to the West, Thai food, loved the world over for its complexity of flavours. Cambodian food, unsurprisingly shares some of the attributes of both, mixed in with a dash of ' je ne sais quoi' left over from the french occupation. Khmer cuisine has been influenced also by India and China from its earliest trading days.
Usually the food is easy to prepare and uses quite simple ingredients. From these simple ingredients however spring tantalising dishes such as fish, baked in a banana leaf with chilli, coconut and lemon grass (Amoc) which are destined to become more internationally famous.
